My example will be Gmail, but they all work the same. Some, like Comcast, don't allow folder creation on the iPhone stock Mail app. Google calls them Labels, but I'll refer to them as Folders.
1. Tap on to the desired email account and tap Edit in the top right.
2. Tap New Mailbox in the bottom right.
3. Enter a title for the Folder and tap Save in the top right.
4. A new Folder is born.
With Gmail, you can also add a Folder under the [Gmail] where you see Important and Starred.
Repeat steps 1 and 2 from above.
Next Tap where it says Gmail.
Then Tap [Gmail]
Enter your title
New Folder
