Does Jailbreaking allow installing older versions of apps on newer ios?

I am so new to jailbreaking, I haven't used a jailbroken device in my life yet, but with the advent of ios7 - 8, I am seriously considering it. I just can't stand the way they look.

Need someone to let me know if I would be able to install the older versions of ibooks and podcasts apps on ios8.

I want the ibooks that looks like a book, not just a plain text black on white, and I want my podcasts to show the moving tape.

Let's say I find the correct ipas from the ios6 era.

Would I be able to install them to work on jailbroken ios8?

The stock Apple apps will likely result in an error if you revert to older versions...

This is sad. Still trying to decide if I should buy a new iPad Gen4 running ios6 or try jailbreaking ipad air 2 to act as closely to ios6 as possible...
