You can pretty much do that from any app on the iPhone anyway.

Are there apps where it doesn't for you?

I know the Facebook app doesn't allow you to cut and paste. I always have to switch over to a web browser and copy what I want. Sucks.

Enable Copy Text in Facebook - is a tweak in Cydia that allows you to copy text to clip board
