Using Mac Pro as server

Please pardon my ignorance but I've never used a server on a regular basis and am uncertain of its benefits. For me a server is a place to upload a file or basically a networked hard drive. I've got two old mac pros: a 1,1 and a 3,1. While I'm salivating about the new Mac Pro I'm having a hard time justifying the layout just yet.

I use the 1,1 basically as the family entertainment center: we watch movies, and netflix and it houses my itunes library for steaming around the house. I use my 3,1 for photo, video editing and motion graphics. ( I've pimped them both up with extra ram and in the 3,1 I've flashed a PC Nvidea 2Gb video card for it).

I freelance and work alone. How could I use one or both of the machines as servers? What are the benefits? Is it worth the bother? I'd love to sell them both and while the 3,1 still has some muscle, I've tried selling the 1,1 and haven't received any interest.
