Just got my wife an iPhone from Verizon. It's at 4.2.6. Can I keep it there or will it force me to update when I do the first sync?

You're never forced to update... iTunes will ask if you want to, and you can opt-out.

it will never upgrade the firmware unless you click yes to do it. The firmware and the sync are two separate things.
