How to remove jailbreak?

I have put Cydia and jailbroken my ipad 4 but decided I don't like it. Also the cydia icon disappeared from my homescreen. I jailbroke with pangu and am running ios 7.1.

Please help

Restore your iphone/iPad. Means install a fresh copy of iOS. If your running 7.1.1 update to 7.1.2 you will be unjailbroken again

So by updating to the new ios do I have to do it through itunes or OTA, over the air

You need to do it through iTunes.
Best bet would be to create a backup.
Put your device in DFU mode. Restore as new.
When completed restore from your backup.
Unless you can handle a restore as new without using a backup, then do that, just restore as new.
