Today my iPhone wanted to push through 5.0.1... my phone is jailbroken so obviously I dont want it nor the 1 on there... do any of you know how to get the 1 off of there (without updating it to 5.0.1 obviously)?

Turn off OTA updates on your phone? I have seen one person, at least, that updated OTA to iOS 5.0,1 with their jailbreak intact, with no problems.
