Need to re jailbreak?

Need to re jailbreak...Please help

Hi,
I have no 3G on my iphone and have been meaning to wipe and rejailbreak for ages.
Have a spare couple of hours today and was intending on doing it until I read a couple of posts on here saying that If I wipe and start again Itunes will FORCE me to update to 3.1.3 Is this true?

What is the exact procedure for me to go about doing this. I don't want to get it wrong, and if need be will live with the no 3G for now.

Do I restore through Itunes?
Go into DFU (whatever that is)?

I'm running a 3gs with 3.1.2 (not tethered)

can no one advise the correct procedure for me to wipe the iphone so I can then rejailbreak without automatically having 3.1.3 upgraded...

I'm going to assume you have Cydia installed. When you open it up what does it say at the very top?

Does it say something like "This device has SHSHs on file for iPhone OS:....." ?

If so what does it list?

thanks for the reply. it says "this device has SHSH in file for OS: 3.1, 3.1.2"

With that you can downgrade using Saurik's server and a download of the old firmware.

Sorry for seeming like a noob, but that seems like a nightmare...I take it that's the only way I can do it then?
If I restore via itunes like normal, it will upgrade me to 3.1.3, is that right?
