How can I sign in as visitor to get to my games

Must have pressed a wrong key now when I log into Game Center Jurassic world it reverts to my mothers Game Center and shows level 3 that she is on I am on level 35 and sign in as guest but see no option to sign in as a guest anymore - please help

Unless the "sign in as a guest" option is part of the game you referenced, you have to login to Game Center with your Apple ID and passcode, unless I'm mistaken.

Changing Game Center accounts won't affect your, or your mom's progress. I've heard people use multiple Clash of Clans accounts this way.
