Why is it acceptable to say it is pending?

I have accepted the invitation through my e-mail but it won't show up on my phone as accepted. The I cloud family screen says I have a pending invitation.

Try deleting the user in family sharing and then resending the invitation.

Good morning, @msdaniel924. Welcome to iMore.
@Rob Phillips has a good point. You can also try a simple reboot of your device. This happens to be on occasion and I usually blame it on network connectivity, when when on wifi and full LTE signal. A device reboot usually takes care of it.

Are you using the Apple mail app or a 3rd party app?
