There is no one mastermind behind all istuff at apple. It is the fact that is a collection of brilliant employees who are managed by very capable management. Steve jobs was so great because he successfully led apple to produce perfect products.

If you really want to provide one person as the mastermind, it would be Johnny Ive. Ive is the head designer of all apple gear.
