What do you mean it won't change to your new password ?

iTunes don't save your password you have to type it in every time. Or do you mean it's not accepting your new password when you try to login ?

Maybe it's because your password need to have the requirements which is an uppercase letter and a number which I'm glad I don't have to deal with

How are you attempting to change your password? Understand that the password used in iTunes is actually your more blanketed Apple ID password, and there are very specific ways you have to go about changing that password (as well as verifications and what not).
