Comfort Food for Lockdown

Hey everyone!! Since most of the world is in lockdown because of the CV19 virus. I thought a post with comfort food folks are making while we are in our homes being safe and healthy might get everyone’s mind off of this terrible situation.

I decided to make some homemade pasta tonight.

We made two favorite dishes this weekend. On Friday, we made Cheeseburger pie and on Saturday, we made Roman Holiday which is very similar to Johnny Marzetti. Here’s a picture before it was baked:

Been making vegan burrito bowls, vegan Bolognese sauce for pasta (you guys ought to check out Beyond Meat if you’re not already familiar with it) , lots of vegan soups and stews, enormous salads, been juicing and making smoothies...

As far as food and nutrition, for us here, nothing has changed, except we are more careful about meal planning since we never know what we’ll find in the stores.

That’s the absolute truth! We eat out 85% of the time, so this pandemic has had an effect on us. I go to the store and just get what I can, and we figure it out. Since I don’t cook, it’s a good thing that my husband does, and is quite imaginative!

Having a big ol barbeque chicken with fries and coleslaw and rhubarb/strawberry pie for dessert ,for Mother's Day tomorrow and thank heaven for take out restaurants in this strange time we live in .

Since I’m vegetarian...grilled veggies are my go to. I’ll do Beyond Meat substitutes when I want junk food but I tend to keep my distance from it.
