One of the biggest drains on the battery for a new phone is the "play factor". When we get the new phone, we have to explore. It's what we do. Try this feature and that one... and part of the issue is simply the extra use of the phone as we play with to to get comfortable with the device and it's features and functions. Another part of the issue is the new battery. It takes a couple of charge cycles for the battery to "settle in". So after a week or so, we should all see battery life improvement over what we experience with the device fresh out of the box.
However, that does not mean that there aren't flaws in the OS or "features" and switches that are enabled from the factory that cause the battery to drain more quickly.
I am experiencing battery life close to what I had with my iPhone 4. And to get there, I have had to adjust a few settings... I'm not ecstatic yet with the battery life on the iPhone 4S, but I am satisfied with its performance over the course of a day.
What settings have I tweaked? Here's my list. YMMV.
That's pretty much it. And I am easily getting my battery to last for a full day - with 5-6 hours of usage and 25-30 hours of standby projected.
As I have stated previously, I refuse to turn off functions that I want/need/use just to save battery life. But there is no reason to leave battery draining "features" active if they are something that you will not/do not use.

- FaceBook - turned off ALL PUSH notifications.
- Mail - Set up my GMAIL accounts as Exchange. Turned "Push" off and do an hourly fetch.
- Location Services - Turned off everything that I don't "need". This includes games, apps, etc. Also, disabled location based iAds and Time Zone settings (under System Settings).
- Bluetooth - Turned it off (I don't ever use it).
- Wifi - Turned off "Ask to join networks". If I want to connect to a local wifi hotspot, I'll initiate the connection.
- Brightness - turned brightness down to about 40-50%. It's still plenty bright. I don't need my phone to light up the night time sky.
- Sounds - Turned OFF vibrate with a ringtone. If it's ringing or making a sound, I don't need it vibrate, too.
- Notifications - turned off the unimportant stuff.
