Question re: iTunes backup

New to iPhone, when iPhone is backed up during a sync with iTunes, does it back up everything? For instance, does it backup my bookmarks and other settings, my contacts? Just wondering if it is like desktop manager with my blackberry. Also, when it backs up apps, does it back up the data in the apps? For instance, if I have a password app, lose my iPhone, and restore to a new iPhone, will the encrypted data also be transferred in the restore? What about the current setting in games, or documents stored like in Pages or another file or word processing app, are they restored?

I have found it seems to back up absolutely everything. I don't back up very often, though. It is way too slow. I use mobile me and dropbox to sync and back up the data I care about so all my high scores and whatnot are just out there with my monthly and sometimes biannual backups.
