Why do I have such a huge documents and data consumption

I have a new iPhone 6s with 128GB (about). I don't use iCloud except for transferring calendars and contacts from MacBook Pro. I just use the phone, text, photos, and a couple of apps.

Welcome to iMore! What data and documents consumption do you refer to? What are you looking at? Documents and data is mostly app content. It shouldn't be very much. It's nothing to be concerned about.
