how do i stop my text messages coming to the screen so anyone can see them

Settings, Notifications, Messages, View in Lock screen-> Off

Or you can still have the alert and just turn off the preview of the actual message it contains:
Settings>Notifications>Messages>Show Preview=OFF
(leave View in Lockscreen=ON if you still want a popup that simply says Text Message)

Hello,

I have a question that is a little off topic. LOL. Don't wanna start a new thread. How can I jazz up my text messaging? It's so boring. Is there a way to change the color, font, add background designs & view profile pics rather just seeing the names of people you texted/that texted you? Oh, I'm not ready to jailbreak...can any of this be done without jailbreaking?
