A lot of people are mentioning that their data is being used while their device is idle. There are a number of things that can be causing this but stopping automatic updates via cellular data is something you'll want to turn off.
1) Go into Settings and scroll down to iTunes & App Store
2) Make sure Updates is not selected (no green showing!)
3) Turn off Use Cellular Data
Finally, you don't have to worry about applications updating in the background via cellular data. You can do the same for recently purchased music and apps.
