How to have Verizon unlock my iPhone 4S?

I am getting ready to sell my iPhone 4S to buy a 5.

How can I go about getting Verizon to unlock my 4S?

Also when they do unlock it, what benefit will it offer as a selling point to prospective buyers?

You can ask them nicely. Tell them you are going out of the country. That may help.

The VZW iPhone 4S can only be unlocked to take SIMs from countries other than the US, so for most people, it's not that much use.
