What is the ️ next to some songs in some albums in Apple Music? Also, why can I listen to a whole album but not all of the songs download?

The star is like an award for track, you can give up to five stars, if you wish, if you wish to play all songs, click on Songs rather than Albums or Playlists and away you go.

Do you mean why some songs are greyed out when viewing an album in AppleMusic?
Those songs are greyed out because the label or the artist doesn't want to make that song available for streaming services. This could have multiple reasons which are not disclosed.

Okay, Reading your last paragraph to your post.
I think you just answered my question. I subscribed to Apple Music, and some of the playlists the songs are greyed out.
I only have my iPhone, so some of the solutions were not helping.
If the Artist is causing the limitation. Than its an easy fix, unsubscribe which I won’t do, or buy the tracks.
