One unmentioned change for the workout app: starting with watchOS 10, the "New" button on the left-most page of the workout app moved to be a sub-button in the "End" workout button, despite the fact that this left an empty space on that left-most screen.

I found out the hard way (i.e., I pressed "end" which ended my workout before I wanted) that the "New" button was promoted back up with watchOS 10.2.
