How is the call quality on the Apple Watch?

I believe so since using it does impede your ability to control the vehicle.

It's ok for quick conversations. I use it to talk to my husband sometimes on my way home and he seems to understand what I say to him the first time I say it. I wouldn't hold heart to heart talks on it thought. Quality not clear enough for that.
