How do I reset the iPhone 6 as new?

Resetting Iphone 6 as new

I am having problems with some of the settings not staying on on my iPhone 6 running ios 9.1. My questions are I am on T-Mobile will I have to remove the Sim card before I reset as new, will this do anything to the Sim Card and 2, Can I reinstall the apps I have by just going to iTunes over the air and re downloading them?

No, you do not have to remove the SIM before resetting the device and restoring as new.
