Putting Photos in a new folder

I know how to do this but why is it that when I move it, it still shows in my photo stream. Then when I try to delete it from my photo stream, it will delete it in all folders. Am I missing something or is this just dumb?

It is just that dumb. They way I do it, it transfer timo my computer. Put in folders, and resync to iPhone. Not the best way, but works very well.
