When the iPhone or iPad is remotely wiped by a exchange server, how destructive IS the wipe? Does it kill the phone or just factory reset it?

Factory resets. It removes ALL data from the phone (ALLL!! XD) and then it puts the phone into DFU mode.
Though Apple obviously has special kill-switches for their prototypes, as we've seen activated recently. :P
