"Quote Level" in email?

What does the "quote level" do in the email options? I've just noticed it after the 6.0.1 update. It's after the "add picture" option while composing an email. Thanks.

Quote Level will increase / decrease the quote symbols before the text you're quoting and that feature was there before iOS 6. I think it arrived in iOS 5.
