So far all is good, but, when I now changed to a new phone company, I can not use the new sim card.........

Jailbreak and Unlock is not the same. Jailbreak allows you to run third party apps not sanctioned by Apple on the phone and allows you to unlock the phone. Unlock is where you can use SIM from any carrier in the phone if they support it. So if you're not unlocked search for unlocking 2.1 it's really easy I just don't remember what was used to unlock it Redsn0w maybe anyway search and I'm sure you'll find it.
