I know this was an issue for a long time in the native Mail app, but is there a way to make swiping a mail in the Gmail iOS app bring up the Delete option instead of Archive?

Try Settings>> Mail>> Accounts... select the Gmail account... if you have the option for Archive Messages... toggle it to 'off'
I haven't looked into it but what about if you go to Gmail using your desktop or laptop computer and change the archive settings there so that when you archive it goes directly to your trash.?

This is for the dedicated Gmail app, not an account using the iPhone Mail app. (Although I did try it anyway; no dice.)
I'm not sure what you mean by yes it is, but as I mentioned in the post you quoted, I did try changing that setting—it only affects the behavior in the Mail app, not the Gmail app.
Perhaps it is on the GMail app on an android phone....It may well be that it simply isn't possible.
I just tried your suggestion, and it worked perfectly. Thank you very much for this advice, much appreciated.
