How do adjust photo screen before taking photo

The first time I took photos I could "pinch" screen together for close up shots, now I don't seem to have that option, there is an adjustable bar across bottom of screen, an it doesn't shrink screen enough.

Start your fingers in the pinched position on the screen and then spread the fingers out to zoom.
