deleted back up

I am using a jail broken iPhone 4 and had iOS 5 on it

What I did was unlock it and upgrade it to iOS 7, I did a backup and upgraded both iTunes and my phone, still haven't been able to unlock it

While restoring initially i had my complete backup, which was interrupted and did not complete,

Now my question and issue: I have been trying to restore it again but cannot see the backup i want, all I see are new backups, which are empty or old backups (talking about 2011 old). i can't tell if the backup i want is deleted or over ridden

Can I recover the lost backup & how

When you select new backups iTunes should ask if you want to restore the previous version of that backup instead of the newer one. Restore the older one when it asks. Does it ask you that for any of the new backups you did, I assume today?
