iCloud restore after 1mth last 3 updates were the iPad

How do you u restore the last iPhone backup from iCloud from approx 1month ago, when the last 3 updates were recently backed up from the iPad ? It's not giving me any other options ... :-/

To my knowledge you can't choose a certain backup. You can only restore to the latest back up thru iCloud.
