Differences between GPS and Cellular

I’m in the market for an Apple Watch. My wireless carrier is XFINITY Wireless and they do not offer the watch, therefore, I can’t buy a cellular version. What am I giving up by purchasing the GPS version? Just an expensive Fitbit? I’m a noob when I come to the Watch. I have an iPhone XS Max.

You’re primarily giving up the ability to make and receive calls without the use of an iPhone over a cellular network. You’re also giving up the ability to stream music without the use of an iPhone.
