....Is this a real question? If so, what generation of iPad and what version of iOS is it on? Even my iPad mini on iOS 8.3 doesn't act up like that.

No one in their right mind is going to tolerate typing on a device in that manner. Still, if your question is indeed legit then I suspect water damage.
