What is the rationale behind restocking stores?

The pre-order/back-order phones are those sold through apple.com. Even though those are backordered at this point, the Apple retail stores are also receiving stock for sale. The 10PM reserve for next day pickup phones come from the in-store stock. After the stores close for the evening, the inventory is updated, and any phones available from that in-store stock are available to be purchased for next day in-store pickup. At least, that's how it was explained to my by both a store employee and a telephone sales person at Apple.
