Purchase iTunes match with gift card?

I believe so. When I purchased it, I had a $12.00 balance on my iTunes account from a gift card. I just needed to put a credit card in for the remaining balance. I imagine if I had enough of a credit to cover the total price, it would have let me.

Is it possible?

Yep, but you have to have a credit card on file either way. I had to put one in even though I had over $25 in credit on the account.
