Gmail contacts calendar sync

I set up the caldav aNd carddav on my phone last night. Will that give me better 2 wAy sync rather than having gmail set to sync the 2 within the normal settings? I thought I would try this to see because I don't I was getting sync up to google just sync coming from google down to my phone

Another thing beside syncing a good contact what about if you have to edit your contact info. Say you have someone that moves or changes phone number or whatever . If you change or edit on one device how does all the systems react when it try's to sync? I mean which one takes priority when it tries to update.
