email addresses in texts

Why does some people's names come up as their email addresses when they text me? How do I change this? And when I text certain people they say it says the text is from my email address

Settings>> Messages>> Send&Receive... start new conversations from - select your phone number

Uncheck email addresses in "Send and Receive", unless you're using an iPad.
I had this issue on my iPhone. Unchecking email was the only fix.

Because they are using their Apple ID to send you an iMessage instead of their phone number.
