Question iPhone 7 Plus charging 100% does the charge bolt ever go away?

When the phone reaches 100% does that charge bolt ever go away or is the phone still charging?

The phone will continue to trickle charge as needed after it reaches 100%.

So, no matter how long you leave the charger plugged in the bolt will always be there?

The "bolt" essentially means that the phone is connected to the charger and receiving a charge. Whether it's taking a charge is a different story, one may not be needed. It won't be "overcharging" that's not an issue.
