Can someone answer this or point me in the right direction (I went to the Apple store and 4 guys I spoke to, had no clue).

Model A1633 and Model A1634 ? This is what AT&T has confimed, it?ll sell because it supports their new/faster LTE band 30.
LTE (Bands 1, 2, 3, 4, 5, 7, 8, 12, 13, 17, 18, 19, 20, 25, 26, 27, 28, 29, 30)

Model A1688 and Model A1687
LTE (Bands 1, 2, 3, 4, 5, 7, 8, 12, 13, 17, 18, 19, 20, 25, 26, 27, 28, 29)

If I buy the phone through the Apple Upgrade Plan, I know the phone is unlocked. But will it be the Model A1633/34??? Anyway to confirm this?

I was shocked to see AT&T has it's own model. Due to the high demand, I went ahead and preordered an iPhone 6S plus under Verizon because in the past the models that were available for the iPhone 6 were both CDMA and GSM enabled. With these two models, will it be assured that AT&T owners will be able to use Verizon's A1688 and A1687?

If you selected AT&T as the carrier then yes, it should be.
Anyway to confirm this?
Call Apple Customer Care They may be able to confirm it.

Assured? No. Having said that, I highly doubt you'll have a problem using a Unlocked Verizon brand iPhone on AT&T's network.

I've never had an issue. Both my 6+ and 6 (on ATT and VZW respectively) are completely interchangeable with each other (switching SIM cards).
VOLTE works on both, get good speeds.

That's what I like about the iphone, you can swap seamlessly between VZW, ATT, TMO, etc. My ATT S6 will NOT worth with VZW, for example.

Now if Fi Network (Google Project Fi) would work on an iphone!
