Switching iphones

I have a white iphone 4 and my brother has a black one. We both want to switch with each other. If we just switch SIM cards will all our data and apps be switched too?

No. You would have to log into your iTunes account and restore from backup

What if I've never connected it to iTunes?

You can either connect to iTunes and backup there, or backup to iCloud and restore from either place.
