Why a are some of my entries on NOTES yellow and underscored

When I type in NOTES some of the entries are yellow print and underscored. How do I correct this

Are they hyperlinks? Or dates? Or times? Addresses?

Those will be yellow. You cannot "correct" it as there is nothing to "correct".
