How can I locate my photos that I have transferred from my iPhone?

iPhone photos folder nightmare

I have always just used windows to copy photos off my iPhone5 onto the pc. Now when I transferred all to new iPhone 6 with iOS 8 , it split them into a large number of folders with the senseless letter & number names, and these actually seem to change also, making it extremely difficult to locate my latest pics and videos to download, and ruining my whole organization scheme. Help!
