How does one control the actual speaker volume for received calls rather than just the ringtone volume?

While on a call the volume buttons control the volume.

In the sound settings you can disable the buttons for controlling ringer and alerts and set the ringer and alerts to a desired volume.

As Ed mentioned it's a great feature to have enabled it keeps you from lowering your important volumes like ringer and alerts by accident like when your done playing a game
