You don’t have to wait for iOS anymore.
Before the update was handled on the watch app on an iPhone.
Now you can initiate the update process on an iPhone and update the phone while the watch downloads the update and installs it all by itself.

I started both updates at the same time and my iPhone finished updating and now my watch is preparing the update.
