My iPod has a notification on it saying that it has not been backed up in 8 weeks and that to get it to backup I need to plug it in, lock it, and connect it to Wi-Fi. But when I try to press "okay" so that I can make it go away and do what I have to do, then it won't go away. So it hasn't unlocked so that I can get into it.

Welcome to iMore! I've never had an iPod. But try to reboot the device. Like a hard reset. See if that works.
