Welcome to iMore! Since the HDR version of the photo is digitally enhanced some users prefer to also keep the original "untouched" version. To me it's irritating to have two copies of a nearly identical photo so I don't have the normal photo saved. It's a matter of personal preference.

To second Rob's point, if you're just using the photos for social media or to share with friends and family then there's no need to save the original as well. However, if you're low on space, HDR photos are a little bit bigger files. It's really up to you.

Some like the better HDR photos for the more important uses and it doesn't stay on the phone. As stated, they take more space. The original is kept to have it on the phone to share. That's what I do.
