Why if I write a text and have to stop for some reason MY TEXT IS GONE?

Why if I write a text, the phone rings before I'm finished, I answer it, the text is GONE. Or if I have to stop to look something up or I simply put my phone down for a period of time and then when I return it's gone. Why has I-phone not fixed this? Even Hotmail does has the technology. If I’m writing an email and my battery dies, when I go back its still there. You would think the I-phone 7-plus would have the technology to save it. I never had this problem with Samsung. Sure texts are made for shorter messages but I know many people who write long ones. Not only that but if its short but happens to have important information like a number or a code and you FINALLY get to type it down and then it’s gone. UGHHH it's the most frustrating thing. My goals is to have things that makes my stress level lower and accomplish more task easier. This by far is the one glitch that blocks that goal for me and actually increases those issues.
