Why didn't my apps and emails transfer during the set up process?

I went thru iTunes to transfer my date from 5s to 6plus. My emails, apps and music didn't transfer. How do I do this?

When changing devices you hook up the old device to iTunes... Sync, and back-up... Then, connect the new device... Restore the back-up... Then sync iTunes to it...
