Which iMac Should I buy and do I really need one with an i7 processor?

I am wanting to set myself up at home do digital art, graphic design and looking at the iMac range, I don't understand all the technical terms. Just need to know which is the best one to get without going overboard on the cost of it. Do you really need to spend more to get the i7.
