If you erase all content and settings it will be like it was when it came out of the box.

As stated, selecting to "erase all contents and settings" will put your device back to its native state, however, it will not reset your Apple ID and your iCloud ID. They will still exist on Apple's servers so that you can configure or re-configure your device(s). If you do not want to use them anymore, you can create new ones.
